Palm Heart is a product of approximately 1 metre of the central core of the
tip of a palm. The entire palm is sacrificed to produce a modest quatity of
palmito. Due to illegal felling of protected palms only licensed producers
can process palmito in plantations. There are several types: Acai, its
cousin Jussara, and Royal palm.
